Amish Broccoli & Cauliflower Salad

*This is a recipe that was served to us at an Amish home in northern Indiana.

Mix:

1 head broccoli

1 head cauliflower

Crumbled bacon

Shredded cheese

Dressing:

2 cups Miracle Whip

1/2 tsp pepper

1/2 tsp sugar

Dash of Champagne Vinegar

Add the dressing to the vegetables and toss just before serving.

Amish Croutons

1 stick butter

4 Tablespoons vegetable oil

1 teaspoon onion salt

1 teaspoon garlic salt

1 teaspoon basil

1 teaspoon oregano

3 quarts bread cubes or 1 package cubed hot dog buns

Melt butter, add oil and seasonings; stir and mix well.  Mix with bread or bun cubes.  Bake at 300 until crisp.

Creamy Cucumbers

This is a fast and easy dish to prepare and great for a summer side dish as it’s nice and refreshing.  It’s one of the dishes my mom made and I love recipes that are handed down…they’re the best!

2 Cucumbers, sliced

1/4 of an onion, thinly sliced

1/2 cup Miracle Whip

1 Tablespoon sugar

Salt & Pepper to taste

 

Combine Miracle whip, sugar, salt and pepper until smooth.  You can add a little bit of milk to thin mixture out if needed.

Combine the Miracle Whip, sugar, salt & pepper to make the dressing

Tuna Macaroni Salad

Ingredients

A smooth and creamy tuna macaroni salad – perfect for a picnic or barbecue!

1 cup macaroni
3/4 c cubed cheddar cheese
1/4 c red onion, finely diced
11 oz chunk light tuna in water
1/2 c light miracle whip
Salt, to taste
Pepper, to taste

Cook pasta in boiling water until al dente.  Rinse macaroni under cold water (completes cooking process) and drain.  Combine tuna, pasta, cheese & vegetables.  Combine miracle whip, salt & pepper until well blended and add to tuna mixture.  Mix all until well blended.  Chill for a couple hours before serving.

Seven Layer Salad

This is an excellent dish to take for a potluck.  It receives lots of compliments and there isn’t anything left to take home!

1 head iceberg lettuce

1 c shredded carrots
1 medium green pepper, chopped
1 medium cucumber, chopped
1 c cauliflower, chopped
1/2 c red onion, diced
1 – 10 oz pkg frozen peas
1 1/2 c mayonnaise
2 T white sugar
1 pkg (2 c) shredded cheddar cheese
12 slices crisp bacon, crumbled

Cook bacon until crispy and set aside.  In a large clear bowl (trifle dish works well), layer first 7 ingredients as listed.   Combine Mayonnaise & sugar and spread evenly over top of salad.  Sprinkle cheese and then crumbled bacon over top of Mayonnaise mixture.  Cover and chill approximately 24 hours.  Toss Salad before serving.
