Amish Croutons

*This is a recipe that was served to us at an Amish home in northern Indiana.

1 stick butter

4 Tablespoons vegetable oil

1 teaspoon onion salt

1 teaspoon garlic salt

1 teaspoon basil

1 teaspoon oregano

3 quarts bread cubes or 1 package cubed hot dog buns

Melt butter, add oil and seasonings; stir and mix well.  Mix with bread or bun cubes.  Bake at 300 until crisp.

Amish Sugar Corn

1/3 cup popping corn

3 Tablespoons white sugar

Oil for popping

Heat oil in medium sized pan until hot.  Add popcorn and sprinkle all of the sugar over it.  Cover & shake continuously until popped.  Remove from pan immediately.

White Gravy

Growing up in Milwaukee, Wisconsin I didn’t know what I was missing not having ever had ‘White gravy’.  My mom and step dad moved to Hot Springs, Arkansas when I was a teen and that’s when my love affair with southern cooking began.  This is a recipe I got from my Home Economics teacher my senior year of high school.

½ c fat (Crisco, bacon grease etc)

½ flour

4 c milk (or 2 c milk, 2 c water)

Salt & Pepper, to taste

 

Heat fat in skillet and add flour and stir until smooth – but do not let brown.   Whisk in milk and then add salt and pepper to taste.  Simmer and stir until desired consistency.
