Chili

2 lbs ground beef
1 lg onion
Extra virgin olive oil
Garlic, minced
Cayenne pepper
Salt
Pepper
Chili powder
Cumin
1 29oz can tomato sauce
1 12 oz can tomato juice
Water
1/8 cup sugar

Saute onion in extra virgin olive oil until translucent.   Add ground beef and saute until cooked through.  Add garlic, spices and sugar and stir thoroughly.  Add tomato sauce and tomato juice and about a 1/2 a can of water to the pot.  Bring to a slow boil and then reduce to a simmer.  Simmer for 4-6 hours, adding water if chili gets too thick.

Great with Fritos, sour cream and shredded cheese.
